I thought I was running out of ideas for how to cook sweet potato, until I pulled out the spiralizer from the back of the cupboard, so the sweet potato and prawn stir fry transpired.

I’ve learned to work backwards when doing a stir fry, by this I mean the hob and wok is the last place for the ingredients to reach.  The preparation is everything here.

So the part which is the most laborious I tackled first– peel and spiralize the sweet potato – I used 2 small sweet potatoes for this recipe. Then I moved onto the garlic – 4 cloves peeled and sliced, chopped up a small piece of ginger and 3 spring onions along with 3 stems of tender stem broccoli.  At this point the ingredients are ready for the wok.

The wok went on a high heat, with some coconut oil and mustard seeds, wait until they start popping – be careful they tend to fly everywhere!

The ingredients were added in the following order: garlic, prawns – cook until the prawns are almost done then add broccoli, ginger, chilli, spring onions – season with some salt/soy sauce, and garam masala.  Stir through the sweet potato towards the final stage, as it only needs a few minutes to cook through.

Once everything is cooked through, squeeze the juice of 2 lemons into the stir fry with a handful of chopped coriander.

The 5 minute omelette – came about when I literally had 15 mins to cook, eat and wash up before my next client arrived!

So I started warming up the pan with some coconut oil, then threw 3 eggs into a bowl and added one chopped onion, green chilli and ginger. Seasoned with salt and garam masala.

Whisked it all up and poured it into the hot pan then let it cook through.

I teamed this lusciousness up with some tomato, avocado and my beautiful sauerkraut!

This was devoured within 5 minutes – it definitely hit the spot!!

I do love mince pies, but I’m refraining on buying any until the week of Christmas, or maybe the week before!

It always amazes me, the mass rush at the supermarket in the run up to Christmas – people panic buying as if we are going to war! The mass preparation of over-indulgence is underway.

People often become anxious about their weight during this time of year, which is understandable as party season is upon us, how will we cope with all the lush food and drink.

So I thought I’d share a few tips to help keep it real during the Festive Season.

Don’t Panic Buy Food

We live in a society whereby if there were a food emergency like forgetting the cranberry sauce it wouldn’t be that difficult to locate a 24/7 convenience store that would be more than happy to oblige. (Be sure to check the expiry date though lol)

Plan and prepare your meals carefully just like you would during the rest of the year. In fact Christmas dinner generally could well be a well-balanced meal Turkey/Fish/Nut toast and loads of vegetables, meat/fish/nut roast and two veg – simple, it’s what I bang on about to clients the rest of the year too.

Seasons; Festive Veg

Find out what foods are in season and focus on them, you will be surprised at what you end up with as well as the Brussel sprouts! Others include cabbage, clementine, pomegranate, kale, parsnip, goose, mussels, oysters, pheasant, wild duck, and salmon.

Keep active

All the running around for presents, and picking up relatives, visiting relatives does take up a lot of time, so plan your exercise times wisely.

Getting it done first thing ensures you have the rest of the day to plough through your list of a million and one things. With all the happy chemicals floating around your body you will be guaranteed a very successful day! Leaving it to later in the day, let’s face it – this has a tendency to drop off the list of things to do.

Short powerful and effective

Keep your workouts short (20-30 mins), with minimal rest time.

If you have access to a gym get yourself in the weights room and lift! Focus on the big compound moves; squat, deadlift, pushing and pulling. Increase the intensity with by challenging yourself with the volume of weight and remember to maintain as perfect form as possible to avoid injury.

No access to a gym? just stick with body weight and increase the intensity with duration of the individual exercises.

Set yourself up a mini circuit of 3 or 5 movements and time each round of activity and rest and complete the workout in 20-25 minutes.

E.g.

  • Squat 60s rest 15s

  • Plank 60s rest 15s

  • Glute bridge 60s rest 15s

  • Press up 60s rest 15s

  • Lunges 60s rest 15s

Don’t forget to treat yourself, whether its mince pies, Christmas pudding whatever your pleasure, enjoy it.

This super easy protein pancake recipe came about whilst rushing around getting ready for the school run and preparing for clients all at the same time.

The frying pan went onto a medium heat.

Blender in hand, I threw in some oats, sun warrior chocolate vegan protein blend, an egg, some coconut milk and blitzed it altogether.

Poured the mixture into the hot pan, waited for one side to cook – best way to ensure this is to check for little holes appearing on top the surface of the pancake and if you shake the pan around a little, the pancake becomes unstuck and moves freely in the pan.

Finish cooking the topside under the grill for a minute.

I usually make a giant (big as the pan) pancake and cut into quarters.

My son and I usually demolish one piece each and leave the rest for snack time after school.

He likes it with banana and honey, I usually eat is as it is, while getting the packed lunch ready.  A nice mug of green tea with a slice of fresh lemon is perfect to wash it down with.

I was caught out unprepared, all my batch cooked meals had been eaten, rushing around between work, home and the school run, I had to throw something together for a spot of lunch.

Speedy Scrambled Eggs and Tenderstem Brocolli

There’s always a box of eggs in the fridge, so I simply scrambled 2 eggs with some chopped up tenderstem broccoli – seasoned with some black pepper and red chilli flakes – lunch was ready to eat in under 5 minutes, and devoured within a minute.

A few minutes of peace over a cup of green tea and I’m ready for the school run.

Healthy eating is not about depriving ourselves of things we like to eat, in actual fact it’s all about balance.  You feel great whilst maintaining a healthy eating regime and even better when you can indulge too.

Clients often ask me how to cope when eating out, should they even eat out. My answer: of course, why not? Socialising plays a big part in all of our lives.

Generally, the aim is to eat plenty brightly coloured vegetables alongside a protein source of your choice, and all the while keeping the starchy carbohydrates like bread, rice and pasta to a smaller portion or lower frequency.

So, I was out for dinner at Basuba Ethai with some friends the other night.  We decided to eat at Basuba Eathai, a favourite of ours.

My menu choices were pretty straight forward. I decided to go for the chicken and butternut squash stir fry with a small bowl of jasmine steamed rice.  Now I didn’t have to eat all of the rice, so I didn’t – my choice.

My all-time favourite dish at this restaurant is the Chinese broccoli, which I ordered as a side. Absolutely stunning!

I washed it all down with a sparkling lemon grass and ginger drink.

Total calories according to MyFitnessPal = 332

Not bad really!

So eating out needn’t be a nightmare, try to put into practice making good choices, from the selection of the cuisine to what you actually order.

Don’t be afraid to ask for alternatives, for example when we go out to eat at our local Mediterranean restaurant the main meal often comes with rice and chips – I will always ask for the seasonal veg.

You are responsible for what goes into your body, no one is forcing you to eat the rice and chips ….it never hurts to ask.
